RAVIOLI RANCH ON SONOMA MOUNTAIN
Join us for day of sourdough bread talk and techniques. This course is
geared towards empowering the home baker with an interest in learning
about beginner and intermediate sourdough bread baking techniques
and theory.
The daylong class will be held at Ravioli Ranch, home of Sonoma
Mountain Breads. Lee Magner and Mai Nguyen will empower you to use
intuition in your home baking practice.
Farmer Mai will share with the class how to use different grains across different harvests, to explore diversity of varietals and terroir of new seasons. Additionally, there will be discussion regarding the local grain economy here in Sonoma, an introduction to some of our favorite wheat varietals, as well as a clinic on how to
maintain a healthy levain without it becoming an all-consuming task.
Class will include focaccia sandwich lunch set and time for fulfilling
conversations with fellow classmates during coffee breaks.
